Stripe Connect is mature at the shape it models: one customer pays, one connected seller is paid, you keep a flat application fee. The moment a single payment has to fan out to several parties, you're into separate charges and transfers — one transfer per recipient against the same charge, each waiting on that charge's funds to clear. And because an application fee is one number, any commission richer than a flat rate gets computed in your own code.
